We have created a biface whetstone that combines two different grains, 1000 and 3000, in order to maintain the blade in perfect condition.
By using first the rougher grain (1000) then the finer grain (3000) to sharpen your knife, you will preserve its fine cutting edge.
The whetstone 3000 is made by joining a high-quality natural stone to an artificial stone using a special process that dispenses with binding agents. The result is a whetstone that allows you to maintain your blade with ease and precision. It is the ideal companion of Michel Bras knives.
Whetstone
Sharpening a knife involves quite literally cutting its surface by means of grains aligned on the whetstone's surface. Today the two kinds of materials used —artificial and natural stone— each has its advantages and disadvantages.
Artificial stone:
In the most common kinds of artificial stone available today the grains are bound by means of "glue." This artificial binding process has the advantage of distributing the grains evenly over the surface. However, because the "glue" tends to melt and run when the blade is being sharpened, there is a "slipping effect," i.e. the blade heats up and slides over the surface. As a result, it may lose some of its rigidity.
Natural Stone:
Natural stones hewn from rock do not heat up or cause the blade to slide. But the grains of such stones lack homogeneity in size and distribution and thus do not sharpen evenly.
The 3000 whetstone was created to combine the advantages of both kinds of stone. No binding agent was used in its fabrication. A novel technique using thermal energy makes it possible to distribute grains evenly over its surface so that there is no risk of slippage or heating up when you sharpen your knives.
As a result, they will keep their fine cutting edge for a lifetime.

They are more than just cutlery. Indeed these cooking implements are more like precious "jewels" than ordinary kitchen utensils.
What Michel Bras expects of a knife is first that it be "sharp and beautiful," and second that it be "well-balanced and fit firmly in the hand."
"Cutting herbs with a blunt knife is like wounding them," Michel points out. "If the herbs are wounded," he says, "their blood is lost, along with their beauty and savor. They just wither and die."
The act of cutting means finding harmony for Michel Bras. He expresses this using the example of Japanese archery. "In archery, the arrow becomes a part of the archer's body, and if the archer lets go of it just when he feels he has become one with it, he knows he will hit the bull's eye even if he's blind-folded."
The same holds true of the chef's relationship to his knife, he believes. "If a knife has become a part of your hand, you can cut and mince the vegetables without thinking about anything and without hurting them. "
The blade is produced in three layers: a hard stainless steel sandwiched between two layers of a more flexible stainless steel. A hard stainless core layer of VG10 is sandwiched with soft stainless SUS420J2.
This makes for better resistance and durability. Furthermore, a titanium coating has been added to enhance its anti-oxidation properties. The matt satin finish makes for a beautiful and sober appearance.
Made of black laminated wood resistant to water and moisture, the handle has a distinct chestnut shape. The apex of the handle naturally accommodates the fingers and the hand does not tire while cutting.
Connoisseurs will appreciate the beautiful grain of the wood and its silken feel.
High-quality hard maple wood fashioned into a simple rectangular shape. The beauty and serenity of the Laguiole knife find their natural expression in the texture and color of this wood, which is unaffected by changes in the weather. A magnet inside the sheath holds the knife snugly in place.
Shun recommends that you protect your investment by handwashing your blades with gentle dish soap.
Don’t use soaps with citrus extracts or bleach; they can promote corrosion. Do not use scouring pads, steel, or gritty cleanser when cleaning the blades. Rinse and towel dry immediately.
Let the knives air dry for a few minutes before returning them to storage. Never leave your knife sitting in a sink full of soapy water. It does metals no good to be submerged in water for prolonged periods of time, and it’s a danger to you when you reach in.
After you have washed and dried your knives, store them in a block, knife case, in-drawer tray, or sheath. We do not recommend storing the knives unsheathed in a drawer, as this can be a potential hazard to the blades as well as your fingers.
Note
Handwashing is also the best way to care for the wood handles of your Shun knives.
The handle color may change slightly over time due to oils in the hand as well as the natural color change of wood from oxidation and/or exposure to light. This is not a defect, but a natural part of the process.
In order to maximize the life of the blade, regular honing with a Shun steel will be necessary. Weekly honing will extend the time between sharpening significantly. When the time comes to sharpen these premium blades, we recommend using a whetstone, the Kai electric sharpener (specifically designed to sharpen Shun’s 16° blade angle), or sending the knives to a professional sharpener.

To be eligible for a return, your item must be unused and in the same condition that you received it. It must also be in the original packaging.
To complete your return, we require a receipt or proof of purchase which is to be sent to support@houseofknives.com.au. Please do not send your purchase back to the manufacturer. Your refund will be processed and a credit will automatically be applied to your credit card or original method of payment within a certain amount of days.
House of Knives will replace any good/s that arrive at their destination faulty or damaged, provided a claim is made within 48 hours from the parcel being delivered and signed for. To confirm the damage we require photographic evidence. Once received, we will arrange for a replacement to be sent out free of charge.
In most cases, we will not require the damaged item returned to us, however, we do request that you keep the damaged item until we can confirm that we do not require it to be returned. If we do require the damaged item to be returned, we will cover the cost of its return. Customers are not charged for returning a damaged item to us.

Please note that if you do not advise us of anything that may be wrong with your order (including missing or damaged products) within 48 hours from its delivery, we are unable to assist you further under any circumstance.
Editing your order before despatch:
If you would like to simply change the item/s in your order before it has been despatched, you can do this by selecting 'Edit' in your order confirmation email.
Change of mind
If you would simply like to exchange your item/s due to a change of mind, you will be required to cover postage fees to return your items, and then an additional $8.95 to send out your new replaced items (Aus only).
If your order is delayed and it is well past your expected delivery date, you will be required to launch an investigation with Australia Post to locate your item. We cannot do this on your behalf as Australia Post require the customer to raise the investigation directly.
If your order doesn't arrive within 30 days of the expected due date, we are happy to provide a refund in full. This will allow additional time in case your order does arrive.
